Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 boneless chicken breasts sliced into thin pieces
  • 4 cloves garlic minced
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 pound pasta penne, fettuccine, or rotini
  • to taste salt and black pepper
  • 1 teaspoon Italian seasoning optional
  • 1/4 cup reserved pasta water if needed to thin sauce

Instructions
 

  • Cook the pasta in salted water until al dente. Reserve 1/4 cup of pasta water, then drain and set aside.
  • Heat olive oil and butter in a large skillet over medium heat. Add sliced chicken and season with salt, pepper, and Italian seasoning.
  • Cook chicken until golden and fully cooked through, about 5–7 minutes. Remove chicken and set aside.
  • In the same skillet, melt more butter if needed and sauté minced garlic for 30 seconds until fragrant.
  • Add heavy cream and simmer on low for 3–5 minutes. Stir in parmesan cheese gradually until sauce is creamy and smooth.
  • Add cooked chicken and pasta to the skillet. Mix well until coated. Add a splash of reserved pasta water if needed to adjust consistency.
  • Garnish with more parmesan or fresh herbs. Serve warm with garlic bread or salad.

Notes

For a lighter version, substitute heavy cream with evaporated milk. You can also add spinach, mushrooms, or bacon for extra flavor.
