  • 2 tbsp olive oil
  • 1 lb shrimp peeled and deveined
  • salt and black pepper to taste
  • 1 tbsp sesame oil
  • 1 small head of broccoli cut into florets
  • 1 red bell pepper sliced
  • 8 oz sugar snap peas
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger minced or finely chopped

Stir Fry Sauce

  • 1/2 cup reduced-sodium soy sauce
  • 1 lime juiced
  • 2 tbsp light brown sugar
  • 1 tbsp cornstarch
  • 1 pinch red pepper flakes optional, for heat

Instructions
 

  • In the same pan, heat sesame oil. Add broccoli, red bell pepper, and sugar snap peas. Stir fry for about 7 minutes until veggies are tender-crisp.

  • Add garlic and ginger. Stir and cook for 1 minute until fragrant.
  • In a bowl, whisk together soy sauce, lime juice, brown sugar, cornstarch, and red pepper flakes until smooth.
  • Pour sauce into the skillet and cook, stirring, until thickened. Return shrimp to the pan and toss to coat. Serve hot over rice or noodles.

Notes

Feel free to swap in other veggies or proteins like tofu or chicken. For low carb, serve over cauliflower rice.
