In a mixing bowl, combine 1 tbsp olive oil, lime juice, and all seasonings. Add sliced chicken and mix to coat. Marinate for 20–30 minutes.
Heat a skillet or grill pan over medium-high heat. Add remaining olive oil. Cook chicken in a single layer until golden and cooked through (about 3–4 mins per side). Set aside.
In the same pan, add sliced bell peppers and onions. Sauté for 4–5 minutes until tender but still vibrant.
Return chicken to the pan with veggies. Toss to combine and heat through.
Serve hot in tortillas with your favorite toppings like salsa, guacamole, sour cream, and cheese.
Notes
To spice it up, add jalapeños or hot sauce. For a low carb version, serve in lettuce wraps or over a salad. Great for meal prep too!
