Easy Chicken Fajitas

Ingredients
  

Chicken Fajitas

  • 1 lb chicken breast or thighs sliced into thin strips
  • 2 tbsp olive oil divided
  • 1 tbsp lime juice freshly squeezed
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper

Vegetables

  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 onion sliced

To Serve

  • 8 flour or corn tortillas warmed
  • sour cream, guacamole, salsa, shredded cheese for topping

Instructions
 

  • In a mixing bowl, combine 1 tbsp olive oil, lime juice, and all seasonings. Add sliced chicken and mix to coat. Marinate for 20–30 minutes.
  • Heat a skillet or grill pan over medium-high heat. Add remaining olive oil. Cook chicken in a single layer until golden and cooked through (about 3–4 mins per side). Set aside.
  • In the same pan, add sliced bell peppers and onions. Sauté for 4–5 minutes until tender but still vibrant.
  • Return chicken to the pan with veggies. Toss to combine and heat through.
  • Serve hot in tortillas with your favorite toppings like salsa, guacamole, sour cream, and cheese.

Notes

To spice it up, add jalapeños or hot sauce. For a low carb version, serve in lettuce wraps or over a salad. Great for meal prep too!
