Ingredients
  

For the salmon

  • 3 salmon fillets about 1 pound total
  • 1 tsp kosher salt
  • 0.5 tsp black pepper freshly ground
  • 1 tbsp olive oil extra virgin

For the sauce

  • 0.5 white onion diced
  • 0.5 cup sun-dried tomatoes in oil drained
  • 0.5 cup cherry tomatoes
  • 1 tbsp garlic minced
  • 1 cup heavy cream
  • 0.5 cup Parmesan cheese freshly grated
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • 1 cup baby spinach fresh
  • Salt to taste

Instructions
 

  • Pat the salmon fillets dry with paper towels. Season both sides with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Sear salmon 3-4 minutes per side until golden brown. Remove and set aside.
  • In the same skillet, sauté onions, garlic, cherry tomatoes, and sun-dried tomatoes for about 5 minutes until fragrant.
  • Reduce heat. Add cream, Parmesan, paprika, and Italian seasoning. Stir and simmer for 2–3 minutes until smooth.
  • Add spinach and cook until wilted, about 1–2 minutes.
  • Return salmon to the pan. Simmer in the sauce for 5–10 minutes until salmon is cooked through and flakes easily.
  • Serve hot with pasta, rice, or vegetables.

Notes

You can substitute spinach with kale or add red pepper flakes for spice. Store leftovers in an airtight container for up to 2 days.
