For the salmon

For the sauce

white onion

sun-dried tomatoes in oil

Instructions
Pat the salmon fillets dry with paper towels. Season both sides with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Sear salmon 3-4 minutes per side until golden brown. Remove and set aside.
In the same skillet, sauté onions, garlic, cherry tomatoes, and sun-dried tomatoes for about 5 minutes until fragrant.
Reduce heat. Add cream, Parmesan, paprika, and Italian seasoning. Stir and simmer for 2–3 minutes until smooth.
Add spinach and cook until wilted, about 1–2 minutes.
Return salmon to the pan. Simmer in the sauce for 5–10 minutes until salmon is cooked through and flakes easily.
Serve hot with pasta, rice, or vegetables.
Notes
You can substitute spinach with kale or add red pepper flakes for spice. Store leftovers in an airtight container for up to 2 days.
